How can i add attributes to a product? I have a product that has different colours available and different prices for quantities for that product? So i need a drop down for colour and a drop down for quantities and price?
Is this possible?

From looking on their site evolution 12 Pro supports variants but evolution 12 does not.
Which version are you using?
Hopefully someone from Incomedia will be able to verify that.

Evolution 12, you can set variation for quantities/price but the is no other. Is there something that can be added for colour variant, size varient ect...

which version are you using, Evolution 12 or Evolution 12 Pro.
I am using Evolution 12 & it does not allow creating drop down boxes for color. So I downloaded Evolution 12 Pro Demo & I was able to create drop down boxes for color & sizes but not quanty & price.
You may want to download Evolution 12 Pro Demo & see if it is what you need. If you already have the Pro version let me know & I will make a video tutorial showing how I added the drop down box for color.

Just to clear up any possible confusion for anyone reading... there isn't actually a version called Evolution 12 Pro.
The two versions you refer to are known simply as Evolution 12 and Professional 12:
