Custom boxes within Customer details fields

So i have a question, i will try and explain the scenario..
Within the customer details, i have added a "custom" field Special instructions. The customer ordered before and completed the field (basically to send to a different address as a gift). She has ordered again, but not "cleared " the special instructions and the admin of the company just thought it was a gift again. See attached Pic for reference..
Question, is it possible to "clear" the fields after the message is sent or prior to a new order being made? either manually or automatically? is this a database thing or programming.
