How can I format the titles of the pages?
The text is simple, black, and not centered.

Goto step 2, select the page you wish to change, press properties button, set extended page title, fill in title.

Further to what Andre has written, the appearance of the text can be formatted by going to Step 1 General Settings > Template Style > Text Style (please see the attached screenshot)
