Can I choose more than one
option for the same product?

Yes in the shopping cart on your item in TAB options. you can select in an option another option once choosen you get the second option.

I know I have set 6 options, but in the client's cart they can choose only one

For the products it can only be choosen one option. you can add a sub-option to the option so it can be choosen for every option also a suboption.
