Since the latest Windows 10 upgrade my 5 projects have disappeared from the 'Edit an Existing Project' section of the Project Selection page.
Can I get them back without having to re-create the projects?

Try to search for *.iwprj files.
If you find them set the folder above them in your prefrence folder. That folder can be changed in startupscreen of x5 -> preferences.
That should set them back.

I am sure that's what happened to mine too! I got some back, but NOT the latest versions that I had saved. Backup, backup, backup...every week!
