When I create a page with text, can I change the background colour of the text block. I know how to change the text colour but can't see how to change the background colour. Any clues?

Yes,
In step 3 select the cell style button on top, from there you can style your object, check also the other tabs after selecting the style button.
This stylles only your one object. if you want to do the page, goto step 2 press the properties button, and use also the tabs that are then selectable to you.

if you want to change the background color of the cell, then follow Andre's advise, if you want to change the paragraph or sentence or a word, just select your text, then use the bucket next to the font color, it will add the collor behind your wording.
