How do I set a username for visitors to login? I do not want to use an email address. How do I display Username at the top of the login field, and how do I assign a username to a new user?

You need to use an email adres, just for safety.
You can use a fake/self made up email adress if needed. But you need an @ an a dot in the mail adres.
