What does Update Protection mean? If i do not pay for that and if the software which I bought 1 year ago has some errors It will not be fixed? Will I have to publish my website with theese errors?

It means that the program will keep on running, but you get no updates.
If there are updates or new versions you need to buy the upgrade protection or version again.
If you get the update protection now you get a discount 50% I think. If you wait you need to pay full price.
But the program will keep on working like it does now.
