Is it possible to sell gift cards from the online store, that generates a unique number for each gift card, which is then sent via e-mail to the customer for them to print out?

No - this is not possible - BUT - it is possible to sell digital items.
This mean you can sell the gift-card and then the buyer is sent a links ( the link can be "masked" ) where he can download.
You can set a period for, how long the link should be valid.
But beware - you have to make an action before the buyer will receive the link. If you are away for some days, then it will take some days before the buyer will receive what he already paid for.
If you need instant delivery after payment, you need some other software for the shop.

The digital download that is in the PRO version is not PRO - most users expect that when buying digital items and pay for these - Instant delivery. This is NOT the case in X5, not even in the PRO version.
