I have created a website which works well, except when I view it on a mobile phone the menu
does not automatically change to a Hamburger but stay as a full menu.
I have since set it so that it is a Hamburger on all pages but this is not really what I want.

Maybe these help:
Do you have PHP 7.1 or 7.4 with your hosting?
Is the website URL in step 100% correct?
Can you set the hamburger off so we can see the wrong effect? The Hamburger menu only appears when there is not enough space for the normal menu, regardless off the viewport!
Derek, I looked at your website at various resolutions and it appears there is one or a number of objects in the header (or potentially footer) which exceed the displayable width of the header. At less than desktop resolution this is evidenced by a scroll bar at the bottom of the browser window
Go to step 2, template content and select every object, you will see 8 "handles" for each object. At less than desktop there is at least one object that when selected is not within the displayable area. Some of the 8 handles will be off the screen. This could be anything, a large area allocated to the menu is most likely (but it could be a background image which fills the whole area at desktop resolution). If it is the menu you should untick "always display the hamburger menu"
You need to visit every resolution and make sure that in each case all content fits within the displayable area. Once you get this right you can have a text menu for the desktop and the hamburger menu will automatically appear (because you will make the object smaller) at lesser resolutions.
When you get it right for the header you need to do exactly the same for the sticky bar :-)
