I would like more information regarding the cookies used on my site, how to access the settings and add or remove certain cookies that are collected, and where to access this information?

You can see what cookies are generated on your website directly from your browser, it is not something that you can check via software directly
Your browser will take care of this.
As far as the software is concerned, all basic functionalities will generate only technical cookies. For example, the login system.
Try checking the cookies via browser and let me know if you find anything that needs clearing up
