I need to change the text in the "Accept" button when activating the Privacy and Security banner.
How can I do that?

Raphael, sadly you cannot change the wording in the accept button, you can only choose not to show it. You could add your own wording in the banner to indicate the user should close the banner to accept the warning.

In step 1 - General information. Click on the content language option and in the search box type "privacy_button_agree" without quotes.
The option will appear highlighted in blue and on the right you can replace Accept with the text you want.

Raphael, obviously Miguel is correct, I must have been having a "senior moment" when I forgot about the language option and the ability to change any wording pre-defined in WX5.
