Shopping Cart Error in Step 3 - Customer data

Hi, I am having a problem trying to setup a clients shopping cart. everything appears ok, until step 3. The text can not be seen as it is black, and I cant find an option to change the text colour, for example "NAME" "ADDRESS" etc.
I have included a screenshot for you to see.

Hi Euan,
Go to Step 4 'Advanced Settings' on the lefthand side menu and then choose 'Styles and Models' followed by the e-mail tab. The text colour option can be found by selection the 'message content' settings from the dropdown menu under the e-mail item heading (click on the 'e-mail layout' and change it to the 'e-mail content'). You can then change the email text colour in the options presented.
