Cannot find Desktop Template Customisation Window

I have once seen the window for customising the Header and added a Text heading. When I try to go back to it, it is nowhere to be found. Your help says 'Edit Graphic Template' - how?
I have already had to start all over again with a shop online website, because I could not edit the header with the name & details on it. Now I cannot find the window to edit the header and I cannot add text or anything to the footer.
Tell me how to find these customisation windows !

You will find this option in Step 1 General Settings > Template Customization (see the screenshot attached).

That extract from the help file also links to further help which explains how to customize the reponsive template structure in addition to the desktop one.

Thank you. I had not seen the flyout section at the left of the window (this had always been closed, showing only 1,2,3,4,5). I can now set the Desktop header and footer OK.
However I cannot add text in the Responsive Template header (I can in the footer). There is no means of adding text in the Responsive header. I have tried making a jpeg of the text and inserting it as an image, but only the middle part of this shows up in the 480px viewport, it does not resize.
That is by design... please see the following section from the help file for a greater understanding of what can and cannot be modified in the responsive template:

Thanks for previous help but I really need a search box in responsive header or footer, for the online shop I am creating.
The search box works fine in Desktop (960px) mode, but I cannot find how to insert a search box in the 720px or 480px versions. Is this possible or not?
