How do you setup a simple email contact form on this thing, and why isnt this process easier to setup-seems like developers could have spent some time on this subject or posted proper information because there are hundreds of people seemingly unable to understand this process including myself?

Really? this is really, really simple.
There's documentation that indicates the correct use of this program, I recommend you to read a little :)
