How do I change the template on my current website and keep all the pages intact?
Can I do this or do I have to start a whole new project to use another template?

You have to start a new project - BUT - you can then open the "old" project in another instance. THen you can copy a whole page from the old project and paste the page into the new project. This makes it rather easy unless you have more hundreds of pages.
