I have the last version of WX5 which didn't incorporate structured data.
If I buy the latest version and import a site into it, can I simply use the "Add Structured Data" option to incorporate structured data into iit, or do I need to recreate the site from scratch in the latest version?

Yes, if you enable the option WebSite X5 Pro automatically manages some structured data:

I believe so. In other words, if you import your project from a previous version, it should automatically generate structured data. Simply enabling this option in the settings should suffice. Please keep in mind that the structured data it will generate will primarily pertain to the Blog and E-commerce aspects, in addition to those you can see on the indicated screen.
For instance, if you have products, it should automatically generate associated data for them, as well as for comments, and so on.
If you like, you can try it out yourself. I believe WebSite X5 Pro offers a demo you can use to verify this.
