Hello,
I have created a link to an email address, this works fine, but I see no difference whether I enable email address protection or leave these boxes empty.
(I chose WebsiteX5 captcha in step 1 under privacy and security).

If you choose a link to an email
it will work ONLY if there is an email program (outlook, thunderbird, etc) on the pc of the person visiting the site
That active protection causes the email to be shown not in plain text but encrypted, as you can see if you preview the page.
I suggest you use the contact form or don't put the linkmanento the email.
Many people don't have mail software configured on their PCs
