Customise acknowledgements using fields?

It would be nice if it would be possible to permit the use of fields in the automated acknowledgement emails so that these could be personalised further:
e.g. the default salutation in the e-commerce order acknowledgement is currently 'Dear Customer' - this can be edited, but only as fixed text.
Fields would allow an alternative personalised greeting of 'Dear [FIRSTNAME] [LASTNAME]' or similar. This information is already available in the automated order summary in the email body, so hopefully shouldn't be too difficult to implement elsewhere as an option?
