It's not possible to remove the 'Quantity' field as such.

However, you can make it a little harder for customers to order more than one item at a time by using 'Image Objects' to sell your products, instead of using the 'Product Catalog Object'

Create an Image Object on any page, and on the 'General' tab of its properties select 'Add to Cart' as a link...  a new screen will open where you can define the product which you would like to be added to the cart, and crucially you can set the quantity to be added to '1'  -  I suggest you also tick the checkbox 'Add the product without showing the cart', which will prevent the customer increasing the quantity at this stage.

Unfortunately, there is no way (as far as I'm aware) to prevent customers editing the total quantity at the checkout stage.  You can request that the developers consider including this feature in a future release by opening an 'Idea' post to that effect.
