Adding Multiple options to items in the shopping cart

Hey Guys,
We really need the ability to have more then 1 option for products in the shopping cart. So if my customer want to buy a Storage building he could choose multiple options like
- Windows
- Electrical
- Vented Soffits
- Colors, etc...
As of right now we can only choose 1 option -

Are you located in the USA? If yes, how does the shopping cart handle sales tax for retail sales?
Yes this would be good, as I also need to add multiple options to some products in my shop so that customers can choose:
Option 1 with sub option 3
AND
Option 2 with sub option 5
