Danish Letters In Forms And Html-objects

I use danish letters in forms and in html-objects. On the preview there is no problems, but after upload there is no danish letters in the form and in html-objects. I didn't have that problem i V8. And I can't choose Danish Language in General Settings.
What to do?

Hi Steen,
you can change the language in step 1 - General settings - content language. Here you can slect the language you need or create your own!

I can't choose danish (I'll make my own). And it will not have any influence on pages with forms and HTML, unless the the server have the right charset, can I now see. Mayby I can overwrite the charset on the page, but then I have to change it on all pages (?)
But the provider have now changed the charset, so the problem solved, I hope. :-)
