Mobile template structure

I am finishing my website:

Currently I am adding the responsive design (however I do not understand all off it, it works rather easy) but when I try to change the mobile template structure I am able to put in text in the foottext, but not in the header.
In the header I can only add a picture. How do I fix this ?

And by the header no text is possible

At the moment it is only possible to add a text in the footer for the mobile template.
In the header you can only add an image.
