I understand I can created hidden content and set up login and password for users to access certain areas of the site using 12 Pro.
How do you create a Member Sign up page where visitors themselves would be able to complete a form, and submit their own login id and password in order to access hidden content on the site?
Also, What are the currencies you could set up your prices using this software?
I assume USD, EUR, GBP.

you can use every currency, even setup one if you wish. see step4 shopping cart TAB options then check currency
to set up a user login you need to create a database with your provider to keep the users information. Goto step4 , acces management, goto TAB Settings and select registration mode.
