I want to know how to change the word VAT and use the word Tax or Taxes instead of VAT . How do I do /change this.

Hello Chris,

Please click on the icon highlighted in red below...  this will open the Language Content Management window:

Then navigate to the variable cart_vat as shown below...  you will be able to change the value from VAT to Tax using the field highlighted on the right:
