ACTIVATING EMAIL FORM

I have uploaded my websites successfuly except for the email form which I am unable to activate. I have also noticed that in the "Graphic" section it asks for "user e-mail field" I am unable to enter anything into this box and there is nothing in the drop down? could this be the problem? can anyone help? NB. I have tried sending myself a message and have asked others to do also, as yet no success.

If you have an email field in the form where the user have to write his/hers email, the fields name will be in that box where you can't write, and the answer will be sent to that one.
I had big problems with forms by a provider here in Denmark, who not had the last update of PhP. It must be the last one from august 2011, og later. He (still) has 5.3.3. and it will not work with the forms.
