How do I add available quantity to my shopping products

I do not have my shopping cart up and running yet but it is for www.publichardware.com
I have created a few products in the product list, but I only have limited number of these products. What field do I fill out that lets me keep track off inventory, or at least keeps people from purchasing more then I have in stock
