Shopping cart requirement for options

On custom orders I would like it where the customer has to physically change the the options. IE when you long on to the page right now you can hit "add to cart" and it will add the default fan back, and black. Is there a way where they have to physically change the option before they hit buy to cart?

Can you please give me an example of how it has to be changed?
If you mean to customize it as example by entering manually how it has to be customized then this is not possible since the program can only use the options you added in the program but the customer can use the note field when he enters the data to tell how it has to be customized.

I understand the options, but I lack in comunication skills. When the customer creates his order, (option 1) and (sub option A) comes up automatically. I want where no options come up and they must physically pick and option (So I know they did not skip and set and order the generic by accident)

In this case create a first option with no name and a suboption with a blank space as name since the program picks up automatically the first one as default and in this way with a blank one as first you will be sure they selected the correct option or they left it intentionally blank.
