Is there a way of setting a "Subject" field in the contact form so it appears as "Subject" in a received email? A similar question was asked over a year ago, but there seems to be no update.

You can enter the subject of the email using the box highlighted in the screenshot below:

Paul, thank you. But, this is a fixed subject. It does not allow the sender of an email form to write their own subject in a text field.

to allow the user to add his or her own subject you need to add a text field within the form and label it "Subject".
