I want to make it as easy as possible for customers to leave a review after having purchased a product. What is the best way to do this.

Hello Derek
The best way is to enable Comments and Ratings on Product pages for products. This way, the user can enter the page for the product he purchased and leave a review directly there.
You can enable the Product Page on a per product basis when configuring the product in the software under "Details" and you can enable the reviews by going to Properties for the special Page "Product Sheet" in Step 3 and enabling comments

Already done that, just wondering if there is a way to create an anchor for the review section so that a hyperlink can be created to the review section. I could then put this into emails.

I suggest to use the footer as anchor.
It can be done by adding #imFooter to the url for the product.
In the mail you can have something like this:
Please give a review for:
<a href="https://orangedreamz.com/product/?various-flavours-disposable-pod-kit-by-elf-bar#imFooter">Elf Bar 600</a>
This will position the product-page at the bottom when the page is opened.
For the lemonade product the link would be: https://orangedreamz.com/product/?sweet-pineapple-peach-lemonade#imFooter
